Adhirasam (Rice Flour and Jaggery Sweet)

Adhirasam

Adhirasam is a classic South Indian sweet prepared during festivals like Diwali. Made with rice flour and jaggery, this treat is known for its crispy exterior and soft, chewy interior.

Ingredients:

  • 1 cup rice flour
  • 3/4 cup jaggery (grated)
  • 1/4 tsp cardamom powder
  • 2 tbsp sesame seeds
  • Oil, for frying

Instructions:

  1. Dissolve jaggery in water and heat until it reaches a soft-ball stage.
  2. Mix rice flour, sesame seeds, and cardamom powder. Gradually add the jaggery syrup to form a dough.
  3. Let the dough rest for 12-24 hours to improve flavor and texture.
  4. Divide the dough into small portions and flatten into discs.
  5. Deep fry in hot oil until golden brown. Drain on paper towels.
  6. Serve warm or store in an airtight container.
