Adhirasam (Rice Flour and Jaggery Sweet)
Adhirasam is a classic South Indian sweet prepared during festivals like Diwali. Made with rice flour and jaggery, this treat is known for its crispy exterior and soft, chewy interior.
Ingredients:
- 1 cup rice flour
- 3/4 cup jaggery (grated)
- 1/4 tsp cardamom powder
- 2 tbsp sesame seeds
- Oil, for frying
Instructions:
- Dissolve jaggery in water and heat until it reaches a soft-ball stage.
- Mix rice flour, sesame seeds, and cardamom powder. Gradually add the jaggery syrup to form a dough.
- Let the dough rest for 12-24 hours to improve flavor and texture.
- Divide the dough into small portions and flatten into discs.
- Deep fry in hot oil until golden brown. Drain on paper towels.
- Serve warm or store in an airtight container.
